Vegan Marble Cake
The artistic blend of vanilla and chocolate batter might seem like a lot of work, but marble cakes are super easy to make and require ingredients that you probably already have in your kitchen! Both the vanilla and chocolate batter require the same base. They’re layered on top of each other and using a skewer or a knife, the batters are swirled around to create a marble effect. Soft, fluffy and yet moist, this old-fashioned marble cake is an absolute treat for the eyes and taste buds!
INGREDIENTS : –
- 1 1/2 cup all-purpose flour
- 1 cup sugar
- 2 tbsp cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 2 flax eggs (2 tbsp ground flaxseeds + 5 tbsp water : let it sit for 10 minutes)
- 1/2 cup vegan butter, melted or coconut oil
- 1 cup plant based milk
INSTRUCTIONS : –
- Sift the flour, baking powder, baking soda and sugar into a mixing bowl.
- Pour in the flax egg and butter. Mix well.
Whisk in the milk and vanilla extract to form a thick and smooth batter. - Pour half the batter into another bowl, dividing the batter into 2 equal parts.
- To one part, stir in the cocoa powder.
- Preheat the oven to 350 degrees F.
- Grease a cake tin and line with parchment paper.
Pour 1 tbsp of each batter alternately, one on top of each other. - Repeat this, 7-8 times (or more) to form layers. Drag a skewer through the batter and gently make swirls to create a marble effect.
- Bake for 40-50 minutes or until it passes the toothpick test.
- Remove from the oven and allow the cake to cool slightly in the pan before transferring it to a cooling rack to cool completely. Slice and serve.
